There's a reason the raw bar becomes a hot spot. It's interactive, it's elegant, and it gives your guests something to do together. People who've never tried an oyster get curious. People who love oysters are thrilled. And everyone ends up shoulder to shoulder, sharing the experience. We've been part of over 200 events, and weddings consistently produce the best energy. Something about a shucker cracking open a fresh oyster in front of a guest in a cocktail dress just works.
Why an Oyster Bar for your Wedding
How It Works
Delivering an exceptional experience starts with preparation on our end. You can expect our shuckers to be fully set up, pre-shucking oysters at least 30 minutes before service begins. We’ll continue to shuck oysters fresh throughout your cocktail hour, but building a buffer of 50-100 oysters allows your guests to dive right in and avoid the dreaded queue that can form as people funnel in from the ceremony all at once.
If your cocktail hour area is visible from the ceremony, we’ll set up beforehand and prep out of sight to avoid being a distraction. We've done this enough times to know how to read a room and stay out of the way until it's time to shuck.
If you're interested only in Roving Shuckers, things are even easier. We just need some space to place our coolers (preferably out of sight of guests and out of the way of the rest of the operations), which we use to re-supply our oysters/sauces and dispose of our shells while roving.
While we specialize in cocktail hours, we can play our part in any chapter of your big day. We’ve done plenty of receptions, hybrid packages (rover for cocktail hour and full raw bar for the reception), and even rovers providing a shellfish snack on the dancefloor later in the evening. However you may see O’Shucks being part of your wedding, we’re happy to work with you to make it happen.
A core value of O’shucks is making things easy for the people who book our service. This is kicked into overdrive when it comes to weddings. The way we see it, you have enough to worry about; leave the shellfish to us.
Our team is experienced in working alongside wedding venues, planners, and catering staff. We handle our own setup, service, and cleanup and coordinate timing with your venue contact to ensure everything flows seamlessly. When it comes down to it, we just need to know where you’d like us to set up and when service starts.
We can provide a Certificate of Insurance (COI) for your venue and any additional insureds that includes general liability, auto coverage, and workers’ comp. We can also provide copies of our shellfish tags as needed.
Booking your wedding raw bar
Standard Packages
-The Oyster Bar: One-stop shop, everything in one place. You choose where you'd like our raw bar placed, and guests come to the bar to quickly be served their shellfish. We could manage any queue to the best of our ability, but you could add another shucker to limit wait times. We tell couples to start considering a second shucker at events of 100+, and recommend two shuckers if over 150 guests.
-Rovers: The rovers are equipped with a full-service "Shucking utility belt" and make their way throughout your event. They explain the oyster selection, shuck, and dispose of oysters on the spot. They have all the appropriate sides (lemons, napkins, disposable serving forks, cocktail sauce, and champagne mignonette). The rovers are admittedly more of a conversation piece/spectacle. This is not to say that they still don't serve plenty of shellfish- they absolutely do. But they're meant to be more interactive compared to the volume-servicing of the Raw Bar. They are also limited to serving only oysters.
-Oyster Bar + Rover: The best of both worlds: variety, efficiency, and a bit of spectacle. Rover helps the oyster bar pre-shuck some shellfish before/as guests funnel into the party, mitigating hold-ups at the oyster bar. Once the party starts, the rover moves throughout, taking pressure off the bar and ensuring everyone gets their fill.
-Oyster Bar and 2 Rovers: The nuclear, "let them eat shellfish" option. Same concept as the bar + 1 rover, but ensures that no one waits for anything, and you get two rovers moving throughout the party. And one Rover could always return to the bar to back them up, without taking the mini-spectacle of the Rover away from the celebrations. Recommended for events of 250+ guests.

The Oysters
We source a rotating selection from East and West coast farms and local NJ seafood co-ops, and we'll help you choose varieties that complement your event. Many of our couples go with a curated tasting of two or three varieties, bringing you and your guests deeper into the tasting experience.
We also like to feature oysters that help tell the couple’s story. Try a Sugar Shack or Violet Sky oyster as a nod to those LBI summers, or a Wellfleet for the proposal that happened in Cape Cod. If your favorite oyster is available from one of our wholesalers, we’ll do everything we can to feature it on your wedding day.

How far in advance should we book?
We recommend booking as early as possible. Peak-season weekends (May through September) are booked months to years in advance. If you have a date in mind, reach out early to check availability.
