Matt Mullen’s journey has one common theme throughout: Oysters. That, and a landmark Jersey Shore bar. With humble, chaotic beginnings in the infamous Parker House basement in Sea Girt, NJ, Matt was the head shucker during the reign of a happy hour that included 25 cent clams and $1 oysters since 2013, Cutting his teeth (and occasionally his hands), shucking thousands of shellfish every weekend.

While incepted in speed, a deeper appreciation for oysters began when he learned to slow down. As a new variety of oysters came into the Parker House with every unrelenting weekend, Matt became infatuated with the nuances of each- a culinary rabbit hole that will resonate with any oyster lover. From this desire to share this passion for a fascinating creature that has consistently surprised and delighted him, O’Shucks was born.

While 25 cent clams and $1 oyster happy hours are a thing of the past, Matt still carries with him the experience required to serve high-quality shellfish in a highly efficient manner. And in the spirit of the bar where it all began, the desire to make that process as enjoyable as possible for everyone involved.
